Our company did a chilled water experiment to solve this problem. We put a 500ml bottle of water in an ordinary refrigerator (the temperature of an ordinary refrigerator is about -18°C) and a refrigerator at -40°C. The water level is marked with a pen and taken out after freezing overnight. The water level of the chilled water taken out of the ordinary refrigerator is about 1cm higher than that before freezing, and the water level of the chilled water taken out of the refrigerator at minus 40°C is not higher than the water level before freezing. This experiment has obvious advantages for the use of low-temperature refrigerators.

In the above experiment, since the crystallization period of water from 0°C to -5°C is shortened and there is less air, the freezing volume of water does not increase. When freezing meat and fish, the crystallization period of water in the cells is shortened. If the volume does not increase, the cell wall will not rupture and will not affect taste changes. Moreover, due to the low temperature, the storage time is greatly extended, and some bacteria and parasites that are intolerant to low temperatures will be killed, making the meat safer and healthier.
